The process includes:
Pre-fermentation cryo-extraction using dry ice to completely exclude oxygen and temperatures close to 0˚C.

T- OINOS GLOS STEGASTA Assyrtiko VEGAN
Clos Stegasta Assyrtiko from T-Oinos winery is the wine that triumphantly put Tinos on the wine map of Greece and paved the way for others to get involved in the Tinian vineyard. The vines are located at an altitude of 450 meters, on granite soil. The manual harvest is done in 3 consecutive moments to ensure the perfect ripening of the grapes. Then the wine ferments with indigenous yeasts, in stainless steel and oak tanks and remains with its lees for about 6 months. The result is so good that it surpasses even excellent Santorinis. Also, the bottles are extremely limited, so don't drink Clos Stegasta Assyrtiko, there is not enough for everyone! The mineral character of the variety finds its second home in Tinos and is expressed strongly but not dominantly. It dresses the rich and juicy citrus fruits with a marine, salty aura that suits them perfectly. The sharp acidity accompanies the oily sensation exceptionally and bets that it will last for at least 10 years. |
